I believe the less confusing way to schedule is to use UTC and anyone can calculate its home time (Most leagues suggest to use that method).

I should say something like this.

"I'm available to play at 5pm Monday which is midnight UTC"

Correct?

Yes or most probably directly and just Midnight UTC (and on a piece of paper you can keep for yourself on your computer a note with 5 pm )
